Wheat belongs to annual herbaceous plants; a kind of cereals. It is the principal grain crop in most countries of the world. Baking of bread and production of pasta is the most common use of wheat. Also wheat is one of the ingredients of many vodka and beer making recipes. From ancient times cereals have their stable place in a human diet. They are widely used in food both in whole and in processed form. It is cereals that are the basis of all kinds of bakery products, pasta, grains, flakes, oils and great many of others. Certain types of cereals are used for fattening livestock. Cereals are used so widely because of their high nutritional and energy value and high content of vitamins and minerals. They all tend to high content of dietary fiber and starch, proteins, fats, vitamins (especially B vitamins) and minerals needed. Wheat is the most common and widely used cereal. There are countless varieties of wheat that are in accordance with the quality partitioned into several classes.
Wheat of the 1st and 2nd class – is of the highest quality. It is widely used in the manufacture of bakery products and hard wheat is used in the production of pasta. These species of wheat are also used to improve the quality of other species.
Wheat of the 3-rd class is also considered a kind of food wheat. Though this class is inferior to the above mentioned in its quality, nevertheless it does not need any improvement and can be safely used in food.
Wheat of the 4th class can be consumed in the diet only after improving its quality by adding wheat of the 1st and 2nd classes.
Wheat of the 5th class is only suitable as fodder for feeding farm animals and birds.
The Food and Agriculture Organization of the United Nations (FAO) forecast global wheat production to 744.5 million tons in 2017,i.е. 1.8% below the record high of 2016, but still higher than the average for the last five years.This decrease reflects primarily the projected reduction in acreage in North America and a return to normal production volumes in Australia after an exceptionally high volume of production in the past season.
In “Food Forecast” FAO indicates that world wheat consumption will reach 730.5 million tons in 2017, and a significant increase in demand for low-grade wheat, used as animal feed, is predicted.
